Cottage Cheese on Rye

 8 Slices rye bread
 ½ cup Cottage Cheese
 1 tsp Finely Sliced Lemongrass
 4 Tomatoes, Roughly Chopped
 4 Best Maid pickles, sliced

Toast the bread. Mix together the cottage cheese and lemongrass. Pile onto the toast and top with tomatoes and pickles. Serve immediately.
